Brown Butter Gnocchi

This is a great weeknight meal. It is ready in under 30 minutes and can either be a side dish for four or a main dish for two.  Browning the butter really adds a ton of flavor.

Ingredients

  • 3 Cups Fresh Broccoli Florets
  • Cooking Spray
  • 4 tbsp Butter
  • 1 lbs. Potato Gnocchi
  • 1 oz. Paremsan shredded
  • 1 Lemon
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 425°
  • Prepare gnocchi per the package directions.  I tend to like my gnocchi a little softer, so I will add a couple minutes to the cook time.
  • While the water is coming to a boil, spread the broccoli florets on a large sheet pan and spray with cooking spray and season with salt and pepper.  Place in oven and cook for 12 - 15 minutes.
  • Begin melting the butter in a large sauté pan on medium heat.  You are going to allow the butter to brown.  You'll want to keep an eye on it and move the butter a little bit around the pan.  It will start to have an amazing nutty or toasted smell. This will take about 8 minutes.
  • Once the gnocchi is cooked, drain and add to the brown butter.  Allow the butter and gnocchi to cook for another 3 minutes together then add the cooked broccoli.
  • Serve and sprinkle with shredded parmesan.

Notes

This can be served in either 2 large servings or as a side dish to any entree.  It is great with grilled, baked, or sauteed fish, beef, or pork.
