Doughnuts with chocolate glaze and cinnamon, sugar dusting

Ok, so this recipe goes way back to my youth.  I learned how to make these during home-economics class.  I’m pretty sure they don’t even have home-economics classes anymore. 🙂

I love using the flaky layers biscuit dough…Why? Well, have you ever heard of a Doughsant?!?  It’s doughnuts made out of croissant dough.  Yes, I said doughnuts made with croissant dough!  They are sooo good!  Here is my at home version.  

I don’t make these often, but I have been known to make them on camping trips.  They are a super easy and what can be better than a warm doughnut on a cold morning sitting by the fire.

Equipment

  • Double Broiler
  • Large Pan for Frying

Ingredients

Doughnuts

  • Oil for Frying
  • 1 Can Large Biscuit Dough preferably with flaky layers

Cinnamon Sugar Topping

  • Cup Sugar
  • 1 tsp Ground Cinnamon

Chocolate Glaze

  • ½ Cup Semi-sweet Chocolate Chips
  • 3 tbsp Butter

Instructions

Doughnuts

  • Open up the can of biscuits and separate into eight individual biscuits.
  • Cut a hole in the center of each biscuit the size of a quarter.  Keep the excess dough, they make for great doughnut holes.
  • Heat oil in a large pan or a deep cast iron skillet to 350°
  • Carefully, fry the doughnuts in batches for 3 - 4 minutes on each side or until they are cooked through and golden brown.  I usually start with the doughnut holes. Once cooked through allow to rest on a paper towel.

Cinnamon Sugar Topping

  • Mix sugar and cinnamon in a separate bowl large enough to roll the doughnuts around.
  • Once the doughnuts have rested for about 30 seconds on the paper towel, toss them in the cinnamon sugar mixture.  You want to make sure the doughnuts are still warm when you toss them, otherwise the mixture won't stick.

Chocolate Glaze

  • Melt chocolate chips in a double boiler slowly adding chunks of butter until the chocolate is smooth, shiny, and is the consistency of cookie icing.  Be sure to stir it regularly to avoid lumps.
  • Once the doughnuts are cool, dip them in the chocolate.

Notes

If you don't have a double boiler (like me), you can create one using a small to medium pot and heatproof glass bowl.  Here is an instructional video on "How to Make a DIY Double Boiler":
