Black Bean and Corn Salad
This is a great healthy summer side dish that can be served with almost anything. Tacos, burgers, enchiladas, hot dogs, ribs you name it! It is also a great accompaniment to any salad or a burrito bowl. It is also tastes great on tortilla chips or nachos.

Ingredients
- 15 oz Kernel Corn 1 can drained and rinsed
- 15 oz Black Beans 1 can drained and rinsed
- 2 Red Bell Peppers diced
- ½ Cup Green Onion chopped
- 2 tbsp Cilantro freshly chopped
- 1 Lime juiced
- 1 tbsp Olive Oil
- 1 tsp Cumin
- 1 tsp Paprika
- 1 Garlic Clove grated
- Salt & Pepper to taste
Instructions
- Chop red bell pepper, green onions, and cilantro. Place in a large bowl. Add, black beans and corn to the bowl mix well. Drizzle olive oil, sprinkle on cumin, paprika, garlic and mix well. Then add salt and pepper to taste.
- Serve immediately, or allow flavors to develop in the fridge for an hour before serving. Enjoy!
