Ingredients

  • 15 oz Kernel Corn 1 can drained and rinsed
  • 15 oz Black Beans 1 can drained and rinsed
  • 2 Red Bell Peppers diced
  • ½ Cup Green Onion chopped
  • 2 tbsp Cilantro freshly chopped
  • 1 Lime juiced
  • 1 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 Garlic Clove grated
  • Salt & Pepper to taste

Instructions

  • Chop red bell pepper, green onions, and cilantro. Place in a large bowl.  Add, black beans and corn to the bowl mix well.  Drizzle olive oil, sprinkle on cumin, paprika, garlic and mix well. Then add salt and pepper to taste.
  • Serve immediately, or allow flavors to develop in the fridge for an hour before serving. Enjoy!
