Cream Corn Casserole

  • 2½ - 3 Quart Baking Dish

Ingredients

  • 1 15 oz Can Kernel Corn drained
  • 1 15 oz Can Cream Style Corn
  • 1 Box Jiffy Corn Bread Mix
  • 1 Cup Sour Cream
  • ¼ Cup Mayonnaise
  • 3 Eggs
  • ½ Cup Butter melted
  • 1 Cup Parmesan Cheese shredded

Instructions

  • Combine all the above ingredients, except only add ½ cup of the cheese in a large baking dish and bake at 350° until golden brown.
  • Depending on the type of dish you use it may take longer to bake.  When I use a thick ceramic baking dish it takes up to an hour to bake.  If you use a 9 x 13 dish it will only take 20-30 minutes as it is much more shallow. I prefer to use a deep baking dish as it turns out much more creamy.
  • Once cooked through, remove from oven and sprinkle with remaining ½ cup of cheese. As it cools the cheese will melt.  Allow casserole to sit at least 5 minutes before serving.
